Soft Pretzels

Soft pretzels are one of those things that taste way better homemade than anything you pick up packaged. When they come out of the oven, they’re warm, soft in the middle, and just chewy enough on the outside.
Ingredients
Soft Pretzels:
500g strong white bread flour
7g instant yeast
1 tbsp sugar
1 tsp fine salt
300ml warm water
2 tbsp vegan butter (melted) or neutral oil
1 tsp salt to sprinkle on the pretzels (fine or course salt)
Pretzel Boil:
2 litres water
60g bicarbonate of soda (baking soda)
Topping:
Coarse or fine salt
Optional: melted vegan butter for brushing after baking. I brushed some butter, with a tiny bit of garlic and parsley

Instructions:
Make the dough
Mix flour, yeast, sugar, and salt. Add warm water + oil.
Knead by hand for 8–10 minutes or 5-7 minutes on medium speed with a standmixer.
Let rise 1 hour or until doubled.
Shape the pretzels
Preheat oven to 220°C (392°F).
Punch down dough and divide into 6 pieces, I weigh my pieces to be precise but you dont have to do that.
Roll each into a 60–70 cm rope.
Form a U, twist the ends twice, fold down, and press. Like shown in video.
Baking soda bath
Bring the water to a gentle simmer, do not put the pretzels into boiling water. If it boils the water becomes very foamy.
Gently lower each pretzel into the simmering water for 30 seconds.
Remove with a slotted spatula and place on a tray.
Sprinkle with coarse salt.
Bake
Bake for 12–15 minutes, until deep golden brown.
Brush with melted vegan butter if you want them extra delicious and enjoy!
