Vegan Mushroom, Jackfruit and Red Wine Stew

A rich and comforting vegan mushroom and red wine stew filled with tender jackfruit, hearty vegetables, and deep, savoury flavours. Perfect for cosy nights in, this dish brings warmth, depth, and a touch of indulgence to your table, best enjoyed with crusty bread or creamy mash.
Ingredients
3 tbsp plant butter
2 packs of mixed mushrooms
1 tin jackfruit
6 shallots (whole)
5 garlic cloves
2 cups carrots
2 cup baby potatoes
3 bay leaves
1/2 tsp rosemary
Sprinkle of smoked paprika
1 small tin tomato paste
2 tbsp soy sauce or mushroom ketchup
500ml vegetable stock (or more if needed)
400ml red wine
Instructions:
Prep the ingredients:
Peel the shallots and garlic, chop the carrots into thick slices, and halve any larger baby potatoes. Drain and rinse the jackfruit.
Sauté the base: In a large pot, melt the plant butter over medium heat. Add the shallots and cook until they start to soften and turn golden. Add the jackfruit: Stir in the jackfruit and cook for about 5 minutes, allowing it to soak up the flavour and start to brown slightly. Add the mushrooms and garlic: Add the mixed mushrooms and garlic to the pot. Cook until the mushrooms release their liquid and begin to caramelize.
Season and add vegetables: Stir in the bay leaves, rosemary, and smoked paprika. Add the carrots and baby potatoes, coating everything evenly.
Build the sauce: Mix in the tomato paste and soy sauce (or mushroom ketchup). Cook for a minute, then pour in the red wine. Let it simmer for 5–10 minutes until slightly reduced.
Simmer: Pour in the vegetable stock and stir. Bring to a gentle boil, then reduce the heat to low. Cover and simmer for about 45–60 minutes, or until the vegetables are tender and the sauce has thickened.
Taste and adjust: Remove the bay leaves, taste, and adjust seasoning with salt and pepper. If the stew is too thick, add a splash more stock. Serve: Serve warm with crusty bread or creamy mashed potatoes for the perfect cosy meal.
