Pickled Courgettes

These pickled courgettes are the perfect vegan condiment, sweet, salty, and tangy with a refreshing crunch. They’re delicious on their own, great in salads, and absolutely amazing layered into sandwiches or burgers.
Ingredients
1/2 cup red wine vinegar
1/2 cup hot water
1 tbsp mustard seeds
1 bay leaf
1 tsp salt
1 tbsp white sugar
1/2 tsp turmeric
1/4 tap garlic powder
1 tap black peppercorn
1 small courgette

Instructions:
1. Add all the ingredients except the courgette to a clean jar. Stir or shake gently until the salt and sugar dissolve.
2. Slice the courgette into thin rounds or ribbons.
3 Add the sliced courgette to the jar, making sure it’s fully submerged in the pickling liquid.
4. Let it sit at room temperature for about 1 hour to start absorbing the flavours.
5. Seal the jar with a lid and place it in the fridge. The pickled courgettes will continue to develop flavour and are best enjoyed chilled.
